Recipe Review: Bubble Up Enchilada Casserole

All these snow days calls for trying new recipes.  Here’s what was for dinner last night (and probably tonight).

Bubble Up Enchilada Casserole

I like making new dishes, but I always get nervous when trying something that has lots of steps – I didn’t really listen when my mom tried to teach me how to cook as a kid.  I liked to think I was a tom-boy, and tom-boy’s don’t cook, right?  😉  Either way, this dish is super easy to prepare, and lasts quite awhile if there’s only 2 people in your household.  I think next time I’ll add some taco seasoning or something to give it a little more punch.

Bubble Up Enchilada Cassarole

  • 1 lb. lean ground turkey
  • 1 (10 oz.) can enchilada sauce
  • 1 (8 oz.) can tomato sauce
  • 1 can reduced fat biscuits (I used Pillsbury)
  • 1 1/2 cups shredded reduced fat Mexican Cheese

1. Preheat oven to 350 degrees.

2. Brown turkey in a large skillet and drain (if needed).

3. Add enchilada sauce and tomato sauce to turkey, stir.

4. Cut biscuits into fourths and add to turkey mixture.

5. Spray 9 x 13 glass baking dish with non-stick spray.  Pour mixture into baking dish – spread evenly.  Bake for 25 minutes.  After 25 minutes take it out and add the cheese.  Bake an additional 10 minutes.

    I love this dish! Add taco seasoning or cumin for taste.

    This looks delicious. So comfort-food-y. I made Fitness Magazine’s mac and cheese tonight…the best “healthy” version I’ve ever had. 🙂 It’s that time of year for casseroles!
